'Preppy Kitchen Super Easy: 100 Simple and Versatile Recipes' will be published this summer

The Preppy Kitchen founder and social media star exclusively shares with PEOPLE that his second cookbook, Preppy Kitchen Super Easy: 100 Simple and Versatile Recipes, will be published this summer by Simon Element, an imprint of Simon & Schuster.
“It can definitely feel like a mad dash trying to get dinner on the table in time, so I made sure to fill my book with quick and easy main dishes, and one pan meals that you can make with everyday ingredients,” Kanell tells PEOPLE.
The cookbook, which follows Kanell’s bestselling 2022 debut Preppy Kitchen: Recipes for Seasonal Dishes and Simple Pleasures, is all about practicality. Kanell aims to make cooking accessible for everyone, regardless of the most limited knowledge or busiest of schedules.
Kanell recognized the importance of quick thinking in the kitchen as his own children grew up, according to the book's description. Preppy Kitchen Super Easy, which includes step-by-step delectable recipes like Grape and Tarragon Chicken Salad and Chocolate Chunk Pecan Pie Bars, helps readers to prepare meals that will last all week, and are able to be eaten in a variety of ways, from a snack to part of a main dish.
Kanell has additional tips for how to make the most of your meals, such as cooking for members of the family who might have specific taste requirements.
“If you have picky eaters at home, try including them when you cook,” he says. “Even adding spices into a bowl and doing some whisking can really help picky eaters feel invested in the meal and encourage them to try the dish they helped make.” He recommends using the breading from his Crispy Citrus Glazed Chicken recipe to make foods like zucchini fries and cauliflower nuggets, and to hide veggies in batters, like in his Spiced Zucchini muffins.
Kanell has also incorporated some of his own family recipes into the book, too.
“I adapted my mom's Turkey Meatballs with Creamy Pasta, her take on Swedish meatballs, for the book,” he says. “It's a favorite recipe we all love that is full of flavor, creamy, and so easy to make. I love that it can be a quick weeknight meal or be served at a dinner party with pride. Bursting with flavor, simple to make, and so comforting.” He adds that the Spicy Greek Orzo was “a constant presence” at his grandparents’ Sunday dinners, and goes well with “everything from a Sunday Roast Chicken, to Skillet Steak with Rosemary-Garlic Butter, to my Creamy Spinach-Stuffed Salmon.”

Kanell also urges readers of Preppy Kitchen Super Easy to put their own twist on the recipes in the book.
“Every recipe also has tons of variations to really encourage the reader to experiment, use what they have on hand, and make the dish their own,” he says.
Preppy Kitchen Super Easy will be published on Aug. 20, 2024, and is available for preorder.
